It is not enough to just mill like in our grandparents' time. Everything must start with the right grain.

Everything begins in the field

How we obtain our cornmeal matters. But just as important is the corn where it all begins.

That is why, in 2026, within the Biruința Olteniei Cooperative, we cultivated flint corn specifically intended for human-consumption cornmeal.

After harvest, the grains will be transformed into a coarse country cornmeal, with an authentic corn flavor and the germ retained in the finished product.

The essential difference

The germ stays in the cornmeal

In the degermination process, the germ is separated from the rest of the grain. Our cornmeal will be non-degerminated, meaning the germ remains in the finished product.

Thus, the cornmeal retains more of the natural components of the corn grain, offering a rustic texture, a richer aroma, and a unique nutritional profile specific to a whole product.

Why is the germ important?

The germ is the living part of the corn grain. It is a valuable natural component containing a significant portion of the grain's healthy lipids, minerals, and natural compounds.

We don't want an ultra-fine, textureless cornmeal. We want the kind of cornmeal used to make real polenta: hearty, flavorful, and rich in corn taste.

The polenta grandma flipped onto the wooden board and sliced with a string. A simple taste that takes us back to the traditional meals of yesteryear.

From grain to cornmeal

1. We cultivate Flint corn intended for human-consumption cornmeal.
2. We harvest We wait for the grains to reach full maturity and develop the right characteristics.
3. We mill the cornmeal We use a specialized corn mill, preserving the germ in the finished product and achieving the desired coarse texture.
4. We package The first bags will be prepared after the autumn 2026 corn harvest.
